Apple Cinnamon Muffins

1 ½ Cups all purpose flour
¾ Cup sugar
¾ teaspoon baking soda
½ teaspoon baking powder
¾ teaspoon ground cinnamon
1 egg
1/3 cup orange juice
¼ cup butter or margarine, melted
2 cups chopped peeled tart apples

In a large bowl combine flour, sugar, baking soda, baking powder, and cinnamon; set aside. Beat egg; add orange juice and butter. Stir into dry ingredients just until moistened (batter will be thick). Fold in apples. Fill greased or paper- lined muffin cups two-thirds full. Bake at 350 degrees for 20-25 minutes or until muffins test done. Yield: about 1 dozen.

Apple Crisp

5 Apples
Peel core and slice into greased baking dish (2 qt.) Add ¼ c water, sprinkle with cinnamon.
Mix together:
1 c. brown sugar
1 c. oatmeal
½ c. melted butter
Put this mixture over the apples. Bake at 350 for 45 min. Serve warm or cold with milk or ice cream.


Baked Oatmeal

2 Cups milk
4 eggs
2 Cups oatmeal
1 Cup brown sugar
¼ oil
1 tablespoon baking powder
1 teaspoon salt
Cinnamon, Raisins, Nuts

Mix all ingredients in large bowl in the order listed above. Spray a casserole pan with pam. Pour ingredients into casserole pan. Cover and place in refridgerator over night. Bake at 350* for 20-30 minutes.

Blueberry Coffeecake

¼ c. shortning
1 c. sugar
1 egg
1 ¾ c. flour
½ tsp. Salt
3 tsp. Baking powder
½ c. milk
½ tsp. Vanilla
2 c. blueberries dusted with flour

Cream shortning, sugar, and eggs, beat until light. Add flour, baking powder and milk alternately. Mix well. Add floured blueberries, pour into 9?13 pan, bake at 350 about 35 min.



Crab Quiche


8 eggs
2 c. half and half
1 lg. Chopped red pepper
1 pkg. (8 oz.) imitation crabmeat
1 c. soft breadcrumbs
1 c. shredded swiss cheese
1 c. shredded cheddar cheese
½ c chopped onion
1 tsp. Salt

In a bowl, combine all ingredients. Transfer to a greased 13X9 baking dish. Bake uncovered at 350 for 30-35 min. Let stand 10 min. before serving. Yields 8-10 servings

Fruit Charlotte

Base:
3 cans peaches, drained (15 oz.)
1 pint blueberries, fresh or frozen
1 can cherry pie filling
dash of cinnamon

Topping:
1 pkg. (3oz.) Cook and serve vanilla pudding
1 c milk
dash of cinnamon
1 egg
16 slices firm white bread

Preheat oven and stray oval 2 qt. Baking dish. Combine the base in a mixing bowl. Pour into baking dish. Whisk together the ingredients of the topping with the exception of the bread. Dip the bread in the topping mixture and arrange around the edge of the baking dish overlapping the edges of the bread. Bake at 350 for 30 min, the edges of the bread should be golden brown. 8 servings

Pineapple Brunch Casserole

1 8oz. can crushed pineapple 1 C. shredded Cheddar cheese
1 C. biscuit 1 C. milk
4 eggs,lightly beaten 6 tsp. melted butter
1 tsp. Dijon mustard 1/2 tsp. onion powder or
Pinch of Nutmeg 1 tsp. onion flakes
4 oz. cooked chopped ham

Drain Pineapple. Combine pineapple, biscuit mix, milk, eggs, butter, mustard,onion, and nutmeg in blender. Blend until smooth. Mix in ham and cheese. Put in 10" pie pan and bake at 350 degrees until brown,about 30 to 35 minutes.

Plum Nectarine Crisp

3 large nectarines
4 large plums
½ c. brown sugar, divided
cinnamon
½ c. flour
1 c. oatmeal
5 tbs. Butter

Wash and cut up fruit, place in greased 9” pie dish sprinkle with cinnamon and ¼ c. brown sugar, gently mix. In small bowl combine remaining ingredients with a sprinkle of cinnamon, using a pastry blender, blend butter to form crumb like mixture, pour on top of fruit and bake at 350 for 45 min. Serve warm Serves 8-10

Veggie Quiche

4 eggs
1/3 c. half and half
¼ c. baking mix
½ c. chopped zucchini
½ c. chopped yellow squash
¼ c. chopped red bell pepper
1 tomato chopped
1/3 c. Mozzarella cheese, shredded
1/3 c. shredded swiss cheese
1/3 c. shredded cheddar cheese
1 tsp. Dried basil
dash of garlic salt
½ tsp. Salt
1 tsp. Dried Oregano

Chop the vegetables and put in greased
9 “ pie dish. Add cheese and spices. Mix eggs, cream, and baking mix, pour over vegetables and bake at 350 for 45 min.
Serves 6
